The present book highlights some less known bio-functional properties of Hellenic monofloral honeys on the basis of in vitro antioxidant activity, phytochemical, copper and iron contents, complemented with physico-chemical parameters and chemometrics, to verify product's uniqueness. A new theory about in vitro antioxidant activity and total phytochemical content of Hellenic monofloral honeys was developed using bootstrap analysis.
