The functions of Technology and Innovation Management (TIM) are crucial for the development of organizations, especially in tourism where the reorientation of demand requires new or improved products that meet the versatile needs of the customer. In this sense, in the 80's the growing boom of the GTI makes possible the generalization of six functions that characterize it: Inventory, Monitor, Evaluate, Enrich, Optimize and Protect; the same are assumed in this study, especially when its application to product innovation in tourism is still limited. These functions require tools for their development and constitute strategies to position themselves in the market; therefore, their success is closely linked to the provision of services and customer satisfaction. Hence, this research focuses on determining the behavior of the functions and tools of product innovation in the provision of services of the Colonial Cayo Coco Hotel in the Jardines del Rey destination.
