Oil seeds constitute the most widely used component of the Indian diet. Among all oil seeds, soybean (Glycine max. L.) is very important crop. Soybean (Glycine max. L.) is grown in many parts of India, specially in the states like Maharashtra, Madhya Pradesh, Uttar Pradesh and Bihar. The soybean, with its varied uses is the most remarkable of all legumes due to a high protein content (38-44 %) and oil percent (18-22 %). It can be a good alternative to malnutrition problems. In India, it is grown for soyaoil, soyamilk, hay and for forage.In the present investigation, genetically pure seeds of soybean varieties were obtained from All India Oil Seed Project, College of agriculture, Nagpur. The samples were stored in Polyethylene, Cloth and Jute bags. Seeds were stored for 540 days. The portion of seeds from each container were removed at the end of every 90 days for carrying out following tests1. Protein content Estimation2. Reducing Sugar Estimation
