This section includes some head lines to elucidate the chemical composition of Globe Artichoke (Cynara Cardunculus), Achillea (Achillea Millefolium), Pot Marigold (Calendula Officinalis) and Chamomile (Matricaria Chamomilla) flowers belong to family Compositae. Various investigators studied the chemical composition of these flowers such as moisture, ash, crude fiber, crude protein, crude lipids, total sugars, reducing sugars, non-reducing sugars contents and minerals. Also the natural or bioactive components of these flowers extracts such as polyphenols, flavonoids, terpenes, tannins, glycosides, saponins, alkaloids and resins contents were determined. In addition, their antioxidant and biological activities were determined.
