Auf einem internationalen Kongress der Universität Kaiserslautern, organisiert von der Senatskommission zur Beurteilung der gesundheitlichen Unbedenklichkeit von Lebensmitteln (SKLM) der Deutschen Forschungsgemeinschaft im Oktober 1998, stellten namhafte Wissenschaftler die neuesten Forschungsergebnisse auf dem Gebiet der ernährungsbedingten Krebsentstehung sowie der Vorbeugung von Krebserkrankungen vor. Epidemiologische Studien belegen einen entscheidenden Einfluss der Ernährung auf viele Krebserkrankungen. Die Ergebnisse zeigen, dass neben der Aufnahme von kanzerogenen und protektiven Faktoren mit der Nahrung auch sogenannte "life style factors" wie Rauchen, starker Alkoholkonsum und Übergewicht einen entscheidenden Einfluss auf das Krebsrisiko haben. Mögliche Wirkungsmechanismen protektiver Lebensmittelinhaltsstoffe werden diskutiert. Die Beiträge vermitteln einen Überblick über den aktuellen Kenntnisstand und zu dessen Lücken und formuliert Schlussfolgerungen und Empfehlunge n aus Sicht der Senatskommission. Die SKLM legt damit eine aktuelle, wissenschaftlich fundierte Informationsquelle für einen breiten Leser- und Nutzerkreis vor.
