The search for a healthy and nutritious diet has intensified the consumption of frozen fruit pulps by a large part of the population in the state of Maranhão. The book deals with microbiological and chemical analyses carried out on fruit pulps sold at street markets in the city of São Luís-MA. The high counts of molds and yeasts detected are worrying from the point of view of food safety. The fruit pulps used in this study have varying amounts of macronutrients, generally showing high carbohydrate content and low ash, fiber, protein and lipid content.

She has a degree in Industrial Chemistry from the Federal University of Maranhão (1980), a master's degree in Food Technology from the Federal University of Ceará (1996), and a PhD in Food Sciences from the Federal University of Lavras (2004). She is currently Associate Professor III in the Department of Chemical Technology at UFMA.
