The results obtained and their novelty: the possibility of improving the drying process of melon by combined pre-treatment and the use of high-efficiency heat pump drying unit has been shown. Empirical formulas describing hygroscopic properties of melon after adsorption as well as factors influencing the adsorption process and indicators of water activity have been obtained. The properties of working agents have been studied and the method of engineering calculation of heat-pump drying unit has been created.Practical significance: improving the combined method of melon drying by pre-wetting the pulp in syrup increasing the productivity of the unit for the dried product by using immature melon fruits and increasing the yield of finished products through wetting in sugar syrup. Heat-pump drying unit gives an opportunity to save electric energy.
