Carol Archeli Saralegui nació en Donostia (San Sebastián) en 1972 en el seno de una familia de comerciantes, la cual regentaba un puesto de pescadería en el emblemático Mercado de la Bretxa de dicha ciudad. Su infancia transcurre entre escamas, machetes y tripas de pescado. Estudia enfermería como respuesta a una vocación de cuidado y se especializa en nutrición y alimentación. Madre de familia numerosa, después de ejercer como enfermera en diferentes ámbitos, en 2004, decide hacerse cargo del negocio familiar: Pescadería Espe. Aunando así sus conocimientos del mundo del pescado con los de la salud y la alimentación. En defensa de su profesión y con un marcado afán divulgativo imparte cursos formativos y charlas. Su pescadería dispone de un blog y de gran actividad en redes sociales, colabora también como columnista en la revista gastronómica «Ondojan». En 2019, «Pescadería Espe» recibió el premio a la Innovación Comercial, concedido por el Gobierno Vasco, por la utilización, con maestría, de las nuevas tecnologías en la venta del día a día y por la puesta en valor de los puestos de los mercados tradicionales. En 2020, recibió una mención especial en los Premios Nacionales de Comercio Interior otorgados por el Ministerio de Industria, Comercio y Turismo del Gobierno de España.
