David Ellis was born to Eileen and Teddy Ellis, He grew up in West Dublin in the 60s and left school early in life. He went on to owned and operated twelve restaurants, three hotels and a pub in Ireland. He wrote Cooking with the Shack Restaurant to share his heritage of loving family cooking with the world.
