Celiac disease (CD) is an autoimmune enteropathy caused by gluten intolerance, the treatment of which is based on a lifelong gluten-free diet (GFD). Although conceptually simple, the application of a GFD remains difficult, exposing patients to poor compliance and imbalances in nutritional intake.
