Tras estudiar administración y finanzas, la Dra. Dessalces Olenisac se reorientó hacia los estudios de odontología. En la actualidad, trabaja en una consulta privada con su pareja en la región francesa de Gard, al tiempo que ocupa un puesto de agregada universitaria en la Facultad de Montpellier, en el departamento de cirugía oral.
