The transformation is traditionally done with ancestral procedures of the Incanato, the white chuño or tunta is a dehydrated (dry) product, and is preserved for more than five years properly stored; it is a food that can be used in situations of scarcity, and provide food security in difficult situations of climate or other problems that the Andean people may face.
