The present agriculture scenario in Punjab is facing tremendous pressure owing to fragmentation of land holdings, over-exploitation of natural resources under rice-wheat rotation and increasing input cost. At this critical juncture, it will be imperative to give agriculture a commercial orientation by linking it with food processing industries for better returns and job opportunities. In recent times the demand for potato and its processed products has increased because of rising income level of people and fast urbanization thereby generating immense scope in cultivation of processable potato crop in Punjab as most of the processing plants are also located in and around Punjab and Delhi. The present book is an effort to promote cultivation of processable potato in Punjab by screening of different low temperature tolerant Indian and exotic cultivars of potato, in order to identify best agronomic practices and make available the high dry matter and low reducing sugar potatoes to processing industry even under severe winters, against the general belief, at affordable price throughout the year.

Authors are faculty members of Post-Graduate Department of Agriculture, Khalsa College, Amritsar (India), and are associated with research on development of agriculture since more than a decade. They have supervised several M.Sc. Thesis and have publications of national and international repute to their credit.
