This book was written with the purpose of providing professionals related to quality control of edible vegetable oils about the development of modern analytical techniques that can act as complementary and, in some cases as decisive for the determination of both synthetic and natural antioxidants. Modern techniques discussed in the book focus on the recent developments achieved in electroanalytical studies in different research centers in the world and, particularly, those developments achieved in the Group of Electroanalysis (GEANA ), Department of Chemistry, National University of Rio Cuarto, Argentina. In the first part, the book provides an introduction that emphasizes the importance of edible vegetable oils worldwide in the area of food. In the second part, the development of chromatographic methods and, particularly, electroanalytical methods for the determination of natural and synthetic phenolic antioxidants in such matrices is discussed.
