This book explains the possible impacts some anthropogenic activities such as extractive industries may have on the quality of food materials/crops in the vicinity of said activities.It shows that environmental contaminants originating from lead/zinc mining activities have profound influence on the nutritional constituents of food crops. They do this by interacting with the active excipients that may be involved in the biosynthesis of nutritional factors. This is more-so when the pollutants of concern are toxic heavy metals that are implicated in the generation of oxidative stress capable of structural deformation of micro- and macro- molecules.
