Our work is part of the research program of the "Cryptogamie et de Botanique médicale" laboratory, at the University of Badji Mokhtar-Annaba- Faculty of Medicine; Department of Pharmacy; which is aimed at developing new compounds or active ingredients of therapeutic interest. To this end, we planned to carry out a multicentric ethnobotanical survey to gather information and know-how on the use of date pits of the Deglet Nour variety from Tolga-Biskra. This survey enabled us to identify 19 traditional recipes for the use of date pits, of which the cosmetological use represented by the anti-wrinkle effect is the main one, followed by the antidiabetic and antilithiasic effects. We then proceeded to a botanical study: morphological, histological and a study of the powder of date pits, which led us to define the different constituents of the date seed, including the integuments and the albumen, which occupies almost 90% of the seed. The identification of a number of secondary metabolites has enabled us to assess its richness in polyphenols, alkaloids, saponosides...
