Algae are important sources of various bioactive compounds, including phenols, with different physiological effects on human health. Many of them possess antioxidant, antimicrobial and antiviral activities that are important for the protection of algal cells against stress conditions. The discovery of new analytical methods and techniques is important for the study of metabolites in algae and similar organisms with respect to their applications in pharmacology and the food industry. Therefore, red and brown algae were put under investigation to enable the forthcoming researchers to check the possibilities of added value and utilize of such materials in food formulas in order to increase their nutritional values. The present work is the fruit of the cooperation of Dr. Mona Mohamed Abdel-Magied, Dr. Nadia Abdel-Rahman Salama (Professors of Food Science Dept., Fac. Agric., Cairo University) and me as supervisors on Hossam Mahmoud Ibrahem Abo-Taleb (M. Sc. Student at Food Science Dept., Fac. Agric., Cairo University.
