A proper screening and selection of suitable cultivars is very essential to meet the international standards of quality at the competitive prices. The development of new varieties is continuous process and these new varieties of onion are required to be tested for their suitability for dehydrated powder. Hence, the experiment was conducted on released white onion bulb varieties with following objectives for dehydrated powder processing:1. To evaluate the suitable white onion varieties for dehydrated powder.2. To study the shelf life of dehydrated powder of different varieties in respect of qualitative as well as organoleptic acceptability.
