This book talks about the utilization of residues and by-products generated by the fishing industry for the development of biodegradable packaging. Issues such as waste generation by the fishing industry, the valorization of this waste generated by obtaining biopolymers such as chitin, chitosan, collagen, gelatin, and proteins are addressed. We also present an overview of the environmental impact caused by non-biodegradable plastics, and an alternative that is being studied, which is the use of biopolymers obtained from fishing industry waste in the development of biodegradable packaging for food packaging. We summarize what has already been developed and the main applications as food packaging.
