Bee pollen is a product made from flower pollen, a mixture of nectar and bee secretions containing digestive enzymes. It can present different colors, ranging from creamy white to red. Rich in macronutrients, vitamins and antioxidants. It contains, to a lesser extent, minerals, phenolic compounds, flavonoids, sterols and terpenes. It contains most of the essential amino acids and bioactive compounds that give it antioxidant, antimicrobial, hypolipidemic and immunomodulatory activity, making it an indispensable food for human nutrition and health. Therefore, a product for human consumption was developed with this food. The objective of the study was to evaluate the acceptability of a food product made with bee pollen from the Cooperativa Integral de Producción Apicultores de Cuilco, Huehuetenango, Guatemala. For the formulation of the product, its macronutrient and micronutrient content was determined; subsequently, ingredients were selected that would combine with the organoleptic characteristics of bee pollen and complement its nutritional value.
