The growing problem of food safety is directly connected to the new trends in global food demand and food supply. This paper outlines the recent developments in the food chain, starting with production and ending at consumption, which inderectly led to the emergence of new food safety risks. The project investigates the roles of each of the parties that are in some way responsible for the level of food safety. The analysis is based on literature analysis and research of scientific publications.
