Considering that for a food to be of quality it must be free of contaminating microorganisms. In order to avoid foodborne diseases (STDs), the National Health Surveillance Agency (ANVISA) has a regulation that establishes standards to be met by all establishments related to food. Thus, the present book aimed to investigate the hygienic-sanitary conditions of the kitchens of the Municipal Schools of Sorriso - MT. The form used for qualitative analysis was based on the RDC No. 216/2004. Ten schools participated in the research, all of which had a nutritionist responsible for the activities performed in the kitchen, with two to three lunch ladies per shift, who received training twice a year, referring to good practices (GP) and personal hygiene. During the research, positive and negative aspects were observed, a satisfactory condition observed in many schools was the absence of sources of contamination in their surroundings and adequate time between the preparation and distributionof meals, however, in 70% of the schools investigated the washing of the lunch ladies' hands did not meet the required standards.
