In this book, the possibility of production of
cholesterol oxidase enzyme from fungal isolates were
studied. These fungi were isolated from raw butter
and food oils. The study focused on four main aims:
a)surveyed the mycobiota in 30 samples of each of
raw butter and food oils by using five types of
isolation media, b) 432 isolates belonging to 31
species and 14 genera were screened for their
abilities to produce cholesterol oxidase enzyme
using two assay techniques, cholesterol clear zone
(CCZ) and spectrophotometrically, C)studying the
effects of some environmental and nutritional
factors on cholesterol oxidase production by
Aspergillus niger MF 75, Geotrichum candidum RM 22
and Penicillium corylophilum AM 99 (from survey
results, these three fungi were the best for enzyme
production), and d)purification and characterization
of cholesterol oxidase enzyme produced by these
isolates.
