In this book the volatile oils or essential oils of Salvia officinalis growing in Sudan, were obtained by hydrodistillation and analyzed by Gas chromatography mass spectrometer, forty tow compounds were identified. Salvia is a fascinating plant genus, one of the widest-spread members of the labiatae family it features prominently in the pharmacopoeias of many countries throughout the world. Salvia species have been used in many ways. e.g. essential oils used in perfumery the flowers used as rouge, the leaves used for veins, the seed oil as an emollient, the roots as a tranquiliser. Essential oils are mixtures of many substances, predominantly terpenes (90%) and phenyl propane derivatives. The essential oil composition of S.officinalis found that it had many important compounds. The detected main compounds were oxygenated monoterpenes followed monohydrocarbone, squiterpenes and other compounds.
