Autorenporträt
Gilles Fumey (Francia, 1957) es profesor de Geografía cultural en la Universidad París-Sorbona e investigador en la UMR Sirice del CNRS. Es el fundador de la Especialización en alimentos y culturas alimentarias en la Sorbona. Su área de investigación gira en torno a la alimentación como centro neurálgico de problemáticas geopolíticas y a la historia cultural del medioambiente. Ha publicado una docena de obras dedicadas al estudio de la cultura de la alimentación.
