Laura Matthews, a Polymer Research Chemist, studied with the Open University and works full-time in the chemical industry. She has one daughter and two stepsons. After many years of suffering from irritable bowel syndrome (IBS), Laura eventually discovered all the allergens in foods that trigger her symptoms, by using an exclusion diet. Cooking was never one of Laura's favorite pastimes, but having found a lack of available commercial free-from foods to suit her diet, she decided to develop her own recipes that do not contain wheat, gluten, lactose/dairy, egg, and soya. After several years of experimenting to achieve the right flavors and textures, Laura has now completed her first recipe book with foods that replicate the staples of normal everyday eating. Laura now lives a healthy and happy life with her husband in Suffolk, UK.
