This book discusses some common heavy metals present in the meat products through various anthropogenic activities. The sources of heavy metals and their entry into the food chain are discussed. The standard permissible level of heavy metals in foodstuffs also tabulated. Different analytical methods used for the heavy metal analysis and various ranges of heavy metals levels in different meat products were collectively given with references.
