The emphasis is on speaking and understanding English. Useful, relevant practice is provided in the contexts of reception, reservations, and all front of house areas; and also in the restaurant, bar, and kitchen. There are 28 units which cover a range of topics, such as how to take bookings, dealing with enquiries and complaints, giving directions, methods of payment, names of dishes, and methods of cooking. Each unit contains two listening sections with accompanying tasks; a language study and practice section; an activity section; and a vocabulary development section. There is a word list of core vocabulary in English, French, Italian, Spanish, German, Greek, and Japanese.
