Der Fokus der wissenschaftlichen Arbeit von Herrn Prof. Dr. Ammon liegt vor allem auf der Pharmakologie von Arzneipflanzen und deren Inhaltsstoffen sowie der traditionellen indischen Medizin, Ayurveda. Herr Prof. Dr. Ammon war wesentlich an der Untersuchung der Inhaltstoffe des Weihrauchstrauches, den Boswelliasäuren, und deren pharmakologischen Wirkungen beteiligt.
Er ist Autor zahlreicher wissenschaftlicher Publikation, Bücher und Übersichtsarbeiten. Darüber hinaus ist Herr Prof. Dr. Ammon wissenschaftlicher Beirat der Deutschen Gesellschaft für Ayurveda, und er war u.a. Präsident der Deutschen Pharmazeutischen Gesellschaft (1996 - 1999) und Präsident der Deutschen Diabetesgesellschaft (1994 - 1995).
