During the Covid-19 pandemic, Lynda Board retired from her part-time job to write this cookbook and is finally doing what she loves: cooking and helping others better understand celiac disease. She received her own diagnosis, along with other digestive-related issues, after the birth of her second son. Inspired by her own food journey to find easy and tasty gluten-free and low-FODMAP recipes, Lynda wrote I'm Not Crazy, I'm Celiac: Gluten-Free/Low- FODMAP Cookbook. This is her first book. Lynda lives in Grimsby, Ontario, with her husband and dog, Fiona. She enjoys living in wine country and also has a passion for making charcuterie boards.
