Italian restaurants have invaded Paris. In addition to the small family-run businesses (of immigrants or of Italian origin), there are numerous chains of specialized Italian restaurants managed by non-Italian entrepreneurs. This sector is becoming more and more fashionable and is becoming a privileged environment for the professional integration of young Italian immigrants. This research aims at investigating the interethnic relations within the establishments and the ethnic hierarchies that are created there.
