This study evaluated how the drying of Alpinia leaves zerumbetinfluence on the properties of their extracted essential oils (OE's), also applying predictions of mathematical models for the drying phenomenon in the conditions performed. Through the results obtained it was possible to determine the best mathematical model for each drying kinetics. Significant differences in the properties of the OE's were observed. The temperature of 45 °C made it possible to obtain the best performance of the EO, still presenting the best antimicrobial activity and atoxicity. It was concluded that the drying temperature influences the physicochemical and biological properties of the EO's, and thus studies such as this one are necessary to evaluate the best mathematical model to predict drying as well as how temperatures influence the properties of the product obtained.
