In this regard, the author argues that although the government of Kenya gears efforts in ensuring best practices in food hygiene and safety of food in food kiosks, the required food hygiene standards may not be achieved due to drastic changes in lifestyles and food consumption trends. Mr. Kitagwa lectures at Moi University, School of Public Health. He holds M.Tech; B.Tech in Environmental Health from Tshwane University of Technology, South Africa; Dip., HND. in Env. Health from UoN, Kenya; Certificate in Food Management (Israel) and Certificate in ECOSAN (Sweden). He is a member of Africa Academy for Environmental Health.
