Pungitore posee un Doctorado en Bioquímica de la Universidad Nacional de San Luis, ha realizado cuatro estancias post-doctorales en Universidades del exterior dentro de las cuales están incluidas la Universidad de La Laguna en España, y Universidad de Goettingen y Tuebingen en Alemania. Tiene 19 publicaciones científicas.
