Probiotic bacteria (Probiotics) have been gaining increasing interest in recent research. Probiotics are universally used in food industry, dietary supplements, to provide immunity and to prevent many diseases. This manuscript presents some details about the Sudanese traditional dairy products, uses, microbiota present & research conducted. Conventional methods of bacterial identification were used and molecular techniques were also included. Several tests for characterization of Lactic Acid Bacteria as probitics were described. This study is useful guide to undergraduate & post-graduate students. It helps the Sudanese and international researchers to be aware of the probiotics as new emerge bacteriotherapeutic agents.

Mr. Aymen Mohammed was born in 1977 in Omdurman,Sudan. He obtained his B.Sc in Microbiology (2002), Omdurman Islamic University.He got his M.Sc in Microbiology (2011), University of Khartoum. Mr. Aymen is working as researcher in Microbiology Department,Sudan Atomic Energy Commission since 2007.He is the principal investigator of probiotic research
