Writing cookbooks for everyone is such a joy and privilege. To choose a career in the culinary arts was a given, considering my obsession with food, cooking shows, culinary competitions and the entire food industry since I was a child. This career has given me an opportunity to explore the world, and exposed me to a multicultural work environment and, of course, the excitement of overcoming new challenges. I was born in Kolkata, India, and I believe that my family's middle-class background, the city of joy and my tough journey as a chef have all influenced my culinary experiences as I spent countless hours writing, editing, revising and planning. I have worked with some of the biggest chains of groups, hotels, and resorts in different countries, including India and Asia, Seychelles, South Africa, Bermuda, Canada and the US. I worked hard to make this unique book's readers happy about each recipe, all able to be made in a limited time and the same attention to authenticity.
