This property of LAB can be exploited for bio-preservation of vegetables. This book includes information on experimentation and results for anti-fungal properties of LAB.

Dr. Shivaji Sathe is currently working as Head of Department of Microbiology and Vice Principal at T.C. College of Arts, Science and Commerce Baramati (Pune) India.He has also worked as a Chairman Board of Studies in Microbiology as well as Academic Council Member of SP Pune University. He has published two books and several papers in Microbiology.
