To have your own brewery is the dream of almost every home brewer. Bill Mares was one of those, but he had to wait 40 years to meet and join up with Todd Haire, a real brewer, for this dream to become real. This book takes brewing full circle from Bill the amateur, making inadvertently wild beers, to Todd the professional, brewing first-class mixed-culture wild and funky beers in oak barrels, using mixed-culture fermentation. Together, they offer a delightful journey through the craft-brewing revolution of the last four decades.
