The research was conducted in a company located in the district of Tambogrande, Panamericana Norte. Carretera Tambogrande - Las Lomas, Department of Piura, during the months of January to March 2016. The objectives were: To evaluate the effect of waxing and size on the quality and shelf life of Kent variety mango fruit under hydrothermal treatment for 90 minutes and to determine the effect of the factors waxing and size. The waxing factor was studied with Ecowax export MG wax, Citrashine EU 3 wax, Decco Lustr 631 wax and no wax; the sizes evaluated were: size 6 (646-700g), size 7 (551-645g), size 8 (481-550g) and size 9 (426-480g). The Randomized Complete Block design (BCA) was applied, in a 4x4 factorial arrangement with four replications, studying 16 treatments in total where the experimental unit consisted of a bunch of 15 mango fruits, with determinations of fruit weight (g.), brix degrees, percentage of acidity, vitamin C and firmness or hardness of the pulp.
