The present book mainly deals with the enhancement of enzyme production. We exemplified our concept with taking L-glutaminase as a model enzyme. L-Glutaminase has wide applications in food, pharmaceutical and chemical industries. We given the basic idea about the isolation of bacterial strains for specific enzymes production and identification of it by classical as well as molecular biology methods. Subsequently the enzyme production in SMF and SSF were explained. Initially enhancement of enzyme production by traditional optimization method "one at a time method" was exemplified. Later statistical as well as artificial intelligence methods were used to enhancement of enzyme production in SMF. First time utilized the Mixture design to optimize the composition of mixed substratum for growth of bacteria as well as enzyme production. An orthogonal array technique which has less no of experiments than RSM was applied to increase the enzyme production in SSF. Pilot scale studies were explained along with development of empirical models for growth of bacteria and enzyme production. Overall this book covers many modern techniques for optimization of enzymes in both SMF and SSF.
