To expand the scope of acceptability among consumers, the influence of pre-drying treatment on dried product quality is characterized in terms of rehydration, color, texture, nano-indentation, microstructure, surface roughness and X-ray diffraction analyses.

La autora se ha doctorado en el Instituto de Tecnología de la India en Kharagpur (India) y se ha especializado en ingeniería de procesos alimentarios. Posee una medalla de oro de la Universidad por haber obtenido el primer puesto en la primera clase durante su maestría. Ha publicado varias investigaciones en revistas internacionales de prestigio relacionadas con los procesos alimentarios.
