Ohmic heating is a novel process wherein electric current is passed through foods leading to improvement in many processing applications. Carrot juice is popular due to its lower cost and high nutritive value compared to many other fruit juices. The effect of ohmic heating and 2-stage pressing on enhancing juice recovery from carrot, and optimization of the process variables are presented in this work.
