The search for a healthier life extends the marketing of functional foods, which are those foods that contain substances or nutrients that provide benefits to health, whether as prevention or treatment of disease. In general, functional foods are considered to promote human health and may be associated with decreased risks of some chronic diseases. Among them, probiotics, which are living microrgasnimos, bring benefits to human and animal health. In this work we studied the formulation of an alternative culture medium to MRS, using whey and other evaluated nutrients. The techniques involved crops of Lactobacillus acidophilus La 04 with different formulations. Nutrients such as minerals and growth factors, vitamins and proteins were evaluated through the formulation of complex media. After the crops were analyzed aspects such as pH, acidity, cell count and sugars consumed. Among the different formulations were those that used 5 to 7.5% of whey formulated with yeast extract (1.0 to 1.5%).
