The present century has brought wide awareness about compositional, nutritional and nutraceutical characteristics of variety of food. Coffee is the most largely consumed drink worldwide although some adverse health components of coffee having pointed out such as the caffeine.We have tried to process reduced caffeinated coffee rich calcium from Ajwa date seeds that are known for their therapeutic value in view of being potent antioxidant, antimicrobial, and anti-mutagenic, anti-carcinogenic and antifungal anti-inflammatory. The seeds have successfully been listed to control of diabetes, hypertension and some cardiovascular disorders. Coffee in view of the presence of caffeine is regarded as non-healthy due to its some adverse effect although some health benefits of caffeine her also known. The coffee as a beverage is like consumed by a significant community especially among the young population. It is expected that the product will gain popularity. Our objective is to promote healthy natural products from food waste that is an economical source for variety of nutrients.
