In the present work is carried out the elaboration of menus for nutritious school bars with traditional and ancestral Ecuadorian foods that contribute the nutritional requirement for children in basic school stage, in the province of Tungurahua-Ecuador, the same that focuses on the collection of information by means of bibliographical sources, to know the different traditional and ancestral Ecuadorian foods, orienting us also in the location of the province of Tungurahua, the same that is in the highland region of Ecuador, since in this area the foods are different from the rest of Ecuador, they are rich in grains, tubers, cereals, among others. It should be considered that in the realization of 40 different menus for school bars will be calculated based on the need according to their age and taking into account the requirements of their daily consumption, and it is ingested at recess, the same as we know it as the mid-morning, these menus are made focusing on the studies conducted by the Ministry of Education and the Ministry of Health the need to cover 249 kcal.
