Meredith Arthur, MS, RD, LD is a registered and licensed dietitian. She lives in Texas with her three children and husband, as well as one dog, two turtles, and some fish. At the time this book was illustrated, Emy, her white Jack Russel Terrier, and Deogi, her multi-color Jack Rusell Terrier were still alive. They played a huge role in Zoey's life. Now, Sega, Zoey's service dog in training, who is featured on the back cover, is her best potty time buddy. Meredith earned a bachelor's degree at Texas Christian University while completing their Coordinated Program in Dietetics. Meredith completed her Master's Degree in Nutrition at Texas Woman's University. Additionally, she has been a Certified Nutrition Support Clinician with special knowledge in the area of enteral and parenteral nutrition. During the past nineteen years, Meredith has held many positions in the field of dietetics including public speaking, wellness support, and clinical dietetics. Her youngest daughter, Zoey, has three rare genetic disorders: 2q23.1 Microdeletion Syndrome also known as MBD5 Associated Nuerodevelopmental Disorder (MAND), White Sutton Syndrome, and Non Classic Congenital Adrenal Hyperplasia. MAND is the greatest contributor to Zoey's developmental delay, mental disability, autistic behavior, growth hormone deficiency, and neurological impairment. One of Zoey's many struggles is constipation. Through trial, error, and much needed research by her mother as well as a bit of creativity, Zoey now always has "so much more room for the foods that are yummy!"
