A novel technology for recognizing objects and extracting quantitative information in order to provide objective, rapid, non-contact, and non-destructive quality evaluation based on technical visualization process by using image processing and analysis. In addition to inherent and hygienic features quality depends on its physical appearance, moisture content, composition which may be reflected by taste and smell too. In recent years, machine vision has attracted much research and development attention; as a result, rapid scientific and technological advances have increasingly taken place regarding the quality inspection, classification, and evaluation of a wide range of food, beverages and agricultural products.
