Lettuce is a vegetable plant that has been well accepted in the diet of consumers all over the world; it is a fundamental part of the freshness of a dish and represents a food of high nutritional value and organic balance. In Mexico, the largest lettuce production is in the months of August and September with more than 400 thousand tonnes per year. One of the best known varieties is iceberg lettuce, which has the main quality of having a crunchy texture and a watery flavour.
