Microcapsules based on pectin hydrazide via Ugi reaction have been investigated. Stable microgel was created as pickering type emulsifiers, under hexamethyleneguanidine chloride at the concentration range of 0.5-1.5g/L. The size of the microgel particles was measured by dynamic light scattering technique (DLS). System was stable with diapason size distribution between 100nm and 500nm. Water/Oil emulsions were created; toluene has been used as model and Soya oil as target compound. Capsules ware stabilized under complexation of Ca2+ ions with pectin polymers. This emulsion was assessed by optical microscopy studies using OLYMPUS GX - 71 microscopes equipped with SIAMS Photolab. The stable microcapsules with average diameter in the range of 10-100 mim have been obtained. This research open the way to rational design of microcapsules basis on natural polysaccharides.
