Microcapsules based on pectin hydrazide via Ugi reaction have been investigated. Stable microgel was created as pickering type emulsifiers, under hexamethyleneguanidine chloride at the concentration range of 0.5-1.5g/L. The size of the microgel particles was measured by dynamic light scattering technique (DLS). System was stable with diapason size distribution between 100nm and 500nm. This emulsion was assessed by optical microscopy studies using OLYMPUS GX - 71 microscopes equipped with SIAMS Photolab. The stable microcapsules with average diameter in the range of 10-100 mim have been obtained. This research open the way to rational design of microcapsules basis on natural polysaccharides.
