In Angola, dairy products play a prominent role in people's eating habits. The aim of this study was to characterize the physical and chemical indicators of dairy products produced in Angola's industrial sector. It was carried out between February 2013 and October 2015. The process of making the products was monitored and the physicochemical parameters such as pH, acidity, energy, humidity, fat, protein and ash of yogurt, cheese and butter were determined.

Justina Chimuco is Angolan and holds a Master's degree in Food Production and Technology from the José Eduardo dos Santo University and a degree in Veterinary Medicine from the Agostinho Neto University. She is currently an Assistant Professor, teaching Pharmacology and Toxicology at the Faculty of Veterinary Medicine in Huambo, Angola.
